I've always wondered how other bloggers find the time in between their hectic days to blog. I consider myself fairly busy, with cooking 3 meals a day, cleaning the house, doing laundry and making sure my toddler isn't chewing on something she shouldn't, there isn't enough hours in the day to fit in things that i enjoy doing. Im usually in the kitchen, its the starting point of most of my duties, its also where my multi-tasking abilities shine, dishes, dinner, and laundry all within arms reach (oh sweet NYC living). And so while fixing dinner, i decided i wanted a semi-sweet desert to go with some coffee to end the night. At first i wanted a sweet bread, however i changed my mind last minute and went for a simple cinnamon roll and topped it with powdered sugar instead of a glaze, that's got to be somewhat healthier right? Heres what you'll need:
Dough (Original recipe)
- 1 cup of milk
- 1/3 cup of white sugar
- 1/3 cup of butter
- 1 tablespoon of dry active yeast
- 4 cups of all purpose flour
- 1/2 teaspoon of salt
- 2 eggs
- 2 tablespoons of veg. oil
- 3 tablespoons of butter
- 3 tablespoons of brown sugar
- 1/2 tablespoon of cinnamon
- In a saucepan, melt the butter, then add the milk and sugar and stir until its warm to the touch. don't let this over heat as it can kill the yeast, you should be able to test it by dipping your finger in, it shouldnt burn you, a nice warmth. Add your yeast and wait 10 min for it to foam.
2. While that's waiting, work of combining your dry ingredients together. Add your eggs, oil and yeast mixture in your dough and mix til its combined, then turn over on a floured surface and kneed for about 10 mins. Coat a bowl in oil and place your dough in, turning to coat the dough so it doesn't stick. Cover with a wet towel or rag and let it rise for an hour. It should have doubled in size.
3. Punch your dough down then turn onto a flour surface, I split my dough in half to make two batches and froze one. Roll your other half with a roller, aim for an even, square length. take your butter and with your hands spread the butter even on top, then sprinkle your sugar and cinnamon. Take one smaller side and start rolling it to the other side. Slice the roll into 1 inch pieces and place in a grease pan. Let it rise again, a half hour should be enough time. As much you'd want to pop them in the oven after slicing, its much more important to have them rise a second time, this leaves you with a nice a fluffy bun.
